Preheat oven to 400 degrees F and grease a 12 cup muffin tin.
Place all ingredients except blueberries in a blender and blend until smooth.
Gently fold blueberries into the mixture.
Place approx. ¼ cup of mixture in each cup of the muffin tin.
Sprinkle each mixture-filled cup with coconut sugar (optional).
Bake for 15 minutes or until a toothpick inserted into the muffins comes out clean.
