Easy & Awesome Paleo Chicken Soup
 
Ingredients
  • 1 Whole Cut Up Chicken
  • 1 Large Sweet Onion Finely Chopped
  • 2 Ribs Celery Finely Chopped
  • 2 Large Carrots Finely Chopped
  • 1 Cup Chopped Frozen Green Bell Pepper
  • 1 14.5 oz. Can Diced Tomatoes in Juice (do not discard juice)
  • 4 Cloves garlic Chopped
  • 2 32 oz. Low Sodium Natural Chicken Broth
  • Salt and Pepper to taste
  • Grain Free Pasta optional
Instructions
  1. Place the whole cut up chicken, along with the next 6 ingredients in a very large soup pot. Add enough water to cover the chicken by at least 1 inch. Bring to a boil. Skim off and discard the foam from the top of the soup as it forms during the boiling process.
  2. Reduce the heat to medium-low, partially cover the pot with the lid, and simmer for about 2 hours. Carefully remove chicken and allow to cool as the remainder of the ingredients continues to simmer.
  3. Remove the chicken from the bones and place in a bowl. Tear chicken into bite-sized pieces.
  4. If you choose to add pasta to your soup, cook according to package directions.
  5. Add both cartons of low sodium chicken broth and chicken meat to the pot and simmer.
  6. Add salt and pepper to taste. Go easy on the salt shaker, though. Okay?
