Healthy Garlic Dill Chicken: A Paleo and Grain Free Recipe
Ingredients
3 Tbsp Fresh Finely Chopped Dill
1 Tbsp Pink Himalayan Salt
1 Tsp Black Pepper
1 Clove of Garlic, Finely Chopped
½ C Light Olive Oil
Approx. 1.5 lbs Chicken Leg Quarters (about 5 quarters)
Instructions
Preheat oven to 425 degrees F.
Line a baking sheet with foil and grease well.
Mix together first 5 ingredients in a medium bowl.
Place chicken on baking sheet and, without removing the skin, carefully pull skin away from the meat.
Rub approx. 1 tbsp of mixture on the meat under the skin.
Rub remaining mixture on the top of each quarter.
Place in hot oven and bake for approx. 40-50 minutes, or until juices run clear.
