Healthy Garlic Dill Chicken: A Paleo and Grain Free Recipe
 
Ingredients
  • 3 Tbsp Fresh Finely Chopped Dill
  • 1 Tbsp Pink Himalayan Salt
  • 1 Tsp Black Pepper
  • 1 Clove of Garlic, Finely Chopped
  • ½ C Light Olive Oil
  • Approx. 1.5 lbs Chicken Leg Quarters (about 5 quarters)
Instructions
  1. Preheat oven to 425 degrees F.
  2. Line a baking sheet with foil and grease well.
  3. Mix together first 5 ingredients in a medium bowl.
  4. Place chicken on baking sheet and, without removing the skin, carefully pull skin away from the meat.
  5. Rub approx. 1 tbsp of mixture on the meat under the skin.
  6. Rub remaining mixture on the top of each quarter.
  7. Place in hot oven and bake for approx. 40-50 minutes, or until juices run clear.
